How to Make Our Jardin Sour
The cocktails created for our El Fenn residency didn't begin in Soho. They began in Marrakech. Before the menus came together, our team travelled to the city to immerse themselves in its food and drink culture, spending time exploring markets, discovering local ingredients and meeting the makers behind some of Morocco's most distinctive flavours. From fragrant herbs and spices to orange blossom and rose water, the trip helped shape a cocktail menu inspired by the spirit of Marrakech while giving it a London perspective.
The Jardin Sour is one of those drinks. Built around Palmaráe Gin Premier Cru, whose botanicals include orange blossom, mint, mandarin and date, it's bright, floral and delicately balanced. A little taste of Marrakech, served high above Soho.
You'll need
50ml Palmaráe Gin Premier Cru
20ml fresh lemon juice
15ml sugar syrup
10ml rose water
1 egg white
Method
Add the gin, lemon juice, rose water, sugar syrup and egg white to a cocktail shaker.
Shake without ice first. This dry shake is what creates the cocktail's silky texture and signature foam.
Next, add ice and shake again until thoroughly chilled.
Fine strain into a chilled coupe glass and allow the foam to settle before garnishing with a rose petal.
A little taste of Marrakech, wherever you're enjoying it.
To garnish
A dried or fresh edible rose petal.
Where to Find the Ingredients
Palmaráe Gin
The botanical heart of the Jardin Sour. Distilled using French techniques and infused with Moroccan botanicals including orange blossom, mint, mandarin and date.
You can pick up a bottle from the Amethus store, making it the perfect excuse for a summer visit to Soho.
Rose Petals
For the perfect garnish, visit our favourite florist, Leanne, just outside Broadwick Soho. Pick up a bunch of roses, save a petal for your Jardin Sour, and enjoy the rest at home.
